but something about working on that huge scale really bothers me. I hate the idea of not being able to see it all at full size on the screen at once. How do you deal with it?

Doing things on a larger scale aint that terrifying, just make you page smaller on screen =) Zoom as you make your brush size smaller and then next thing you know you got a bunny infested rock in the middle of nowhere.
